How to whisk a clean bowl of matcha

A good bowl of matcha asks for very little, and rewards restraint above all else. Water just off the boil, a loose wrist, and the patience to stop one breath before you think you should.

At AOMI the morning begins this way long before the room fills. Aoi sifts the powder, warms the bowl in her hands and lets the kettle settle off its peak. Nothing here is rushed, because heat and speed are the two things that turn green into something sharp and bitter.

Water, just off the boil

Bring the water to a rolling boil, then let it fall to around eighty degrees, the moment the steam thins and the surface goes still. Sift two scoops of matcha into the warm bowl so the powder breaks apart before it ever meets the whisk. Clumps are the one thing a clean cup will not forgive.

Slowness is an active act. The bowl is finished the moment the foam holds, and not a breath after.

Pour a little water first and loosen the powder into a smooth, glossy paste. Add the rest, then whisk in a light W, leading from the wrist rather than the arm. The sound should stay soft, almost dry, never a frantic scrape against the ceramic.

Drink it before it settles

Stop when a fine, even foam sits across the surface like breath on cold glass. Drink it standing, before the froth begins to fall. That is the whole ritual, and it grows a little quieter every morning you keep it.
